Choose your rim

A margarita begins at the rim, and ours come with a choice of seven. Himalayan rock salt, or chili and lime. Muối tôm, the Vietnamese shrimp salt, or a vegan version of it. Xí muội salt, made from Vietnamese sour plums and slightly sweet. Muối kiến vàng, the Vietnamese ant salt. And sal de gusano, the Mexican agave worm salt that has kept company with mezcal for generations.

Then the glass. Nine house margaritas sit on the list, most built on tequila we infuse with dried Mexican chilies: árbol with tamarind in La Tarta, guajillo with sấu in Ciudad Hanoi, hibiscus with xí muội and peach in the Xí muội. If you would rather keep it classic, there is a margarita on Jose Cuervo Silver or on Altos Blanco.

And if none of them is quite what you had in mind, say so. We are happy to make one to your taste.
