Philosophy
Mezcal and tequila are two of the world's great spirits, and most bars still pour them as a shot and a wedge of lime. We built a room around the opposite idea: traditional serves for those who want the spirit itself, and cocktails built on specially imported Mexican chilies and spices for those who want to see where it can go.
Service
An evening, not a round
Walk in and take a seat at the bar, or book ahead and we will hold a table for you. New to agave? Our managers know their tequila and mezcal. Ask, and they will steer you. Something you like that is not on the list? We are happy to make it to your taste. Not drinking tonight? The Vírgenes are made with the same care as everything else.
